I've pulled the logs. Looks like the `media-encoder` process is stuck in a loop. I cross-referenced this with a similar incident last month. The fix was to restart the process with an increased memory allocation.

Confirmed. Process restarted with `--memory=2g`. Latency is dropping. We're stable.
